Part two of my three easy snacks video is Pumpkin Pie Larabars! These only have five ingredients and come together in about 5 minutes in your food processor, so I’d say they’re practically the definition of fast and easy.
They also taste incredibly similar to pumpkin pie, so yeah, YUM. And if you like these larabars, I have an entire video devoted to homemade larabars with recipes for four different flavors including my personal fave, peanut butter chocolate chip!
These healthy fruit and nut bars are super fast and easy to make and actually taste like pumpkin pie!
- 1/2 cup almonds
- 1/2 cup cashews
- 1/2 cup (4 oz) pitted dates
- 2 Tbsp canned pumpkin
- 1 tsp pumpkin pie spice
- 1. Add nuts to food processor and process until smooth. Then add rest of ingredients and process again until smooth and it holds together in a dough-like consistency. You may need to scrape down the sides a few times to get it evenly processed.
- 2. Put a large piece of plastic wrap on a cutting board and turn out mixture onto plastic wrap. Pull plastic wrap around the "dough" and form into a flat rectangle. Refrigerate for about 30 minutes.
- 3. Cut into bars. Store in the refrigerator until ready to eat.
