I can see how you might doubt the deliciousness of this easy peasy green dip. I mean, it only has 4 ingredients and one of them is peas. Caleb claims there isn’t a single person in the world that actually likes peas (despite Cassandra’s insistence that she in fact, loves peas). Needless to say, Caleb hates peas… but he loves this dip. The only thing I can say is, just trust me.
This dip is fresh, juicy and bursting with flavor, a bit tangy from the lemon juice, that wonderful freshness from the cilantro, a little texture and richness from the sunflower seeds, I’m in love with this dip.
I know many people don’t like cilantro, but cilantro is like the definition of freshness to me. The smell and flavor are just irresistible and this dip is brimming with it, so if you don’t like cilantro, this dip is not for you. However, you could substitute the cilantro with basil, and that would be delicious as well.
I like to eat this easy peasy green dip with tortilla chips, pita chips, carrot sticks or cucumber slices, but it’s very versatile. I’m sure whatever your favorite dipper is will work. Not only is this recipe ridiculously easy, I mean there’s only 4 ingredients and no chopping involved, it’s also super healthy, tons of Vitamin C, Vitamin A, Vitamin B-6, Fiber, Magnesium, all the good stuff. This healthy, delicious dip is only 4 ingredients, and requires no chopping. If you're looking for an easy, delicious snack, you've found it!
- 1 lb frozen peas, defrosted
- 1 bunch cilantro
- 1/3 cup sunflower seeds
- 3 Tbsp lemon juice
- 1 tsp salt
- For serving - tortilla chips, carrot sticks, cucumber slices, pita chips, etc.
- Add all ingredients to a food processor and process until smooth!
